Wonton Charlie's set to open in London this November

Created by the team behind Mr Bao, Daddy Bao, Good Measure, and Master Bao, Wonton Charlie’s marks their first venture beyond Taiwanese cuisine

Inspired by the bustling eateries of Hong Kong, Wonton Charlie’s brings bowls of Cantonese comfort food to London Fields.

This 18-seat spot focuses solely on one dish: wonton noodle soup, a cornerstone of Hong Kong’s dining culture and a true staple of Cantonese cuisine.

The space will transport diners away from east London, drawing inspiration from Hong Kong’s noodle bars where form follows function, with crispy fish skins to snack on, fresh sour plum tea, free hot tea, fridges stocked with local beers and bowls of carefully crafted wonton soup. 

Made from scratch menu

At Wonton Charlie’s, every component is made from scratch, using time-honoured Cantonese techniques and a singular focus on perfecting one dish.

The bouncy yellow egg noodles are made fresh each day from high-gluten flour, lye water and egg yolks to achieve that signature springy, chewy texture.

The chicken broth, rich and deeply savoury, is slow-cooked from roasted chicken with ginger, spring onion and dried shrimp, and flavoured with chicken fat. The fish broth is equally rich in flavour, from fish bones, dried shrimp, sesame oil and flounder powder, a distinctive ingredient in HK noodle soup. Wontons are hand-wrapped in delicate housemade skins, while fragrant chilli oil adds the perfect finishing touch. 

The menu is deliberately concise, letting the food speak for itself. Bowls start from £12, with options to build each bowl just how you’d like it.

Diners can choose their own wontons and have them served in chicken or fish broth, with broth and noodles, or lo mein-style with noodles tossed in a fragrant soy, ginger and garlic dressing. 

Wonton Charlie’s is walk-in only, offering an intimate, fast-paced atmosphere that captures the energy of Hong Kong’s compact noodle joints.

Behind the venture is hospitality group 6 of 1, the team responsible for Mr Bao, Daddy Bao, Good Measure, and Master Bao. Wonton Charlie’s marks the next chapter in the group’s evolution, as they move beyond Taiwanese restaurants for the first time and explore new innovative ideas.
