Recipe: Korean smoked salmon salad

This healthy recipe comes courtesy of our friends at Major.

Ingredients (serves 10)
1kg salmon fillet
50g Major Hickory and Applewood Smoke Liquid Seasoning
250g mooli – julienne
500g baby leaf salad mix
10g black sesame seeds
1 cucumber – deseeded and sliced
3 mini gem lettuce – washed and torn

For the dressing:
30ml Major Korean Mari Base
200ml olive oil
5g Major Lime Fruit Base

Method
Brush the salmon fillet with Major Hickory and Applewood Smoke Liquid Seasoning and allow to infuse for one hour

Place the salmon on a greaseproof tray and roast at 160°C for 15 minutes. Remove from the oven and allow to cool

Make the dressing by combining all the dressing ingredients together. Toss the lettuce, cucumber and mooli in a large bowl with half the dressing

Place the salad mix in a bowl and flake over the salmon. Add more dressing and the sesame seeds, then serve
